We%26#39;re thinking of travelling from Calais to Carcassonne possible going through Fountainebleu, Clemont Ferrand and over Millau Bridge on the way.
Any suggestions of route or hotels (cheap but nice) would be gratefully received!

Is that the wine you are thinking of soaking up ?
My wife and I live in Limoux which is 20 minutes from Carcassonne, both very nice towns.
When we drive it takes about 12 hours in total although we usually do part autoroute and part scenic stopping where-ever we see a nice place about half way.
